So, don't you go skipping it this morning...
I've got a recipe that I love to turn to on a Saturday morning, when I've got more time than usual, I fancy treating myself but I hate the idea of starting the day by moving down a hole on my belt (not that I remember the last time I wore a belt...)
Anyway, I'll cut to the chase;
These pancakes are virtually carb-free and taste-full. Give them a try this weekend!
What you'll need:
- 3 eggs (1 full, 2 whites)
- 1 banana
- Chuck a whole banana, one full egg and 2 egg whites into a blender.
- Blend it up (Obviously)
- For each pancake, pour a ladle size portion of the mix into a hot non-stick frying pan (little butter to prevent it from sticking!) and cook on each side until golden.
- Repeat for each pancake.
- Serve with your choice of berry, drizzle of honey, syrup or lemon juice and if you're feeling extra naughty, a few strips of crispy bacon.
